Perfect Peanut Butter Cookies

Ingredients: makes about 16 medium cookies

Moo1 cup sugar

1 cup creamy peanut butter

1 egg

1/2 tsp baking powder

First, preheat oven to 350 degrees. Then line a cookie sheet with parchment paper . Next, mix sugar and peanut butter together in a a bowl. Then, add the egg and the baking powder and mix altogether . I chill the dough in the fridge for about 10 minutes. Then, spoon out balls of dough on the cookie sheet. Then, press the cookies down using a fork dipped in sugar, and make the crisscross pattern. Then, bake for about 8-10 minutes, depending on how big you made the cookies. Then, let cool on the sheet for about 5 minutes, then transfer to a cooling rack to cool completely. Then eat up! You can also put 1/2 cup of chocolate chips in the dough. Yummy!!

Crockpot Creamy Chicken and Rice casserole

Makes about 8 servings. This is Whitley’s favorite right now!

4 chicken breasts (thawed or frozen. I use frozen)

1 10.5 oz cream of chicken soup.

1 10.5 oz cream of celery soup.

2 cups white rice (uncooked)

3 1/2 cups water or chicken broth. (If you use chicken broth, you won’t need chicken bouillon)

2 cups frozen broccoli

1/2 cup chicken bouillon

2 Tbs garlic powder

2 Tbs onion powder

Salt and pepper to taste

Place chicken in crockpot. Dump both cream soups and water (or broth) on top of chicken. Put rice, broccoli, and seasonings in crockpot and stir. Put lid on and turn on high for 4 hours, or low for 6. When you’re ready to serve, take out chicken and shred it or dice it, which ever you prefer. Then serve! It’s delicious!


Brooklynn’s Brownies

Ingredients:

2 cups sugar

1 cup butter

1/2 cup cocoa powder

1 tsp vanilla

1 cup flour

4 eggs

1/2 tsp baking powder

1/2 tsp salt

1/2 cup chocolate chips

Preheat oven to 350°. Line a 9 x 13 baking dish with parchment paper and spray with cooking spray. Mix sugar and melted butter together. In a separate bowl mix the cocoa powder, vanilla, eggs, flour, baking powder, and salt together. Then, mix with the sugar and butter mixture. Once it’s good and mixed, fold in the chocolate chips. Pour into your baking dish, and cook for 25 to 35 minutes. So easy, Brooklynn makes them! Enjoy!

Easy Peasy Pancakes

Ingredients:

1 cup flour

2 tablespoons sugar

2 teaspoons baking powder

1 egg beaten

1 cup milk

1 teaspoon vanilla

1 teaspoon salt

2 tablespoons oil

1 teaspoon cinnamon

Preheat griddle to a medium/high heat. Mine is a nonstick griddle, so I don’t use butter or grease on it. Mix flour, sugar, baking powder and salt together. Then mix other ingredients in with the flour mix until most of the lumps are gone. Then, you’re ready to cook! Poor batter on griddle and cook until bubbly on the outside edges, about 3 minutes. Cook other side for a couple minutes, then they are perfect!This make about 10 medium sized pancakes.

Crockpot King Ranch Chicken

Ingredients:

4-5 frozen chicken breasts

10.5 oz can each cream of chicken and cream of mushroom soup

10 oz can diced tomato and green chillies (mild or original)

1/4 cup each chopped onions and chopped green bell pepper

10 soft corn tortillas, cut into pieces or strips

Seasonings are based on taste preference. These are an estimate and you can add or take away however much you want.

2 tablespoons each chili powder, onion powder, garlic powder, and chicken bouillon.

Cheddar cheese for topping

Place all ingredients except tortillas and cheese, in crockpot on low for 6 hours or High for 4 hours. About 10 minutes before serving take out chicken and add tortillas. Shred chicken breast and add back to crockpot. Stir well and let the tortillas soak up some of the liquid (about 10 minutes). Then serve with cheese on top. It’s delicious!

One skillet meat and tators

So this recipe is easy… but not quick! It takes about an hour and a half, but it’s a one skillet meal, which I love! Also, all the seasonings are “to taste”. You may need to add some if you like a little more flavor.

 Ingredients:

3 medium potatoes (cut into pieces. The bigger the pieces, the longer it takes to cook)

2 tablespoons olive oil

1 tablespoon onion powder and garlic powder.

1/4 cup chopped onions and chopped green bell peppers

2 lbs ground meat

2 tablespoons beef bouillon 

2 tablespoons Worcestershire sauce

Salt and pepper to taste

Take potatoes and mix the oil, onion and garlic powder together. Put in a large skillet with onions and peppers. Cook on medium heat for about 45 minutes, stirring every ten minutes or so. Most of the potatoes should be cooked through, but if not, it’s ok because they’ll finish cooking with the meat. Add the meat,bouillon and sauce, directly to the potato mixture. Cooking and stirring occasionally until meat is brown. About 30 minutes. Then enjoy! It’s good by itself, or with a tortilla and cheese!!! Super scrumptious!

Yummy Pumpkin Muffins

Pumpkin Muffins

Ingredients

• 1 1/2 cups all-purpose flour

• 1 tsp baking powder

• 1/2 tsp baking soda

• 3/4 tsp salt

• 2 tsp pumpkin pie spice

• 1 1/4 cups granulated sugar

• 1/2 cup vegetable oil

• 1 cup canned pumpkin (about half of a 15oz can)

• 2 large eggs

• 1 tsp vanilla

• 1/4 cup apple juice or water

Some Brown sugar for topping.

Instructions

Preheat oven to 350 degrees.

Grease or line a 12-cup muffin pan with paper liners.

In a large mixing bowl whisk together flour, baking powder, pumpkin pie spice, and salt.

Make a well in center of mixture and set aside.

In a separate mixing bowl whisk together sugar, oil, pumpkin, eggs, vanilla, and apple juice until well blended.

Pour pumpkin mixture into flour mixture and fold with a rubber spatula just until combined. Try not to over mix. Your muffins will turn out dry.

Divide batter among prepared muffin cups filling each 3/4 of the way.

Then sprinkle with brown sugar for a crispy topping.

Bake in preheated oven until toothpick inserted into the center comes out clean, about 20 – 25 minutes. 

Let cool in muffin pan several minutes then transfer to a wire rack to cool completely. If you have any leftover batter, you can make a mini loaf of bread, or more muffins! They freeze well! Enjoy!

Colton Pancakes- For the Allergy Child

These pancakes are wheat free, nut free, and vegan! Makes about 4 medium pancakes.

Ingredients:

(Dry)

1/2 cup Rice Flour

1 tsp Baking Powder

1 TB Sugar

A dash of salt

(Wet)

1/2 cup vanilla Oat Milk

1/2 mashed Banana

1 TB Canola Oil (May have sun flower in it. Make sure your baby isn’t allergic. This can be substituted for any oil that works for your child)

Mix Dry ingredients well. Then add mixed wet ingredients.

*let the batter rise for 5 minutes! This is important or else your pancakes are gooey in the center.

I use a griddle turned on about 350’ and cook about two to 3 minutes on each side.

*These pancakes are moist in the middle. Try and make them as flat as possible, so they cook evenly.
